Best-Easiest Desserts Ever - COBBLER
(My Mom made this almost as long as I can remember)

1 stick melted butter
1 cup self-rising flour
1 cup milk
1 cup sugar
1 can of any fruit, I usually use peaches - the 30 oz size -- drain about 1/2 juice

Melt butter in large casserole or baking dish. Mix flour-sugar and milk, will still be a little lumpy and thin. Pour into melted butter. Add peaches (just pour in). Bake at 375 for about 45 minutes or until golden brown. Great with ice cream or just milk, while warm. Instead of peaches, your can use a large can of any pie filling, apple, cherry etc. People will think you worked hard on it. Sometimes I use a few chopped nuts or coconut on top, before baking.



RAMEN NOODLE SALAD

1-16 oz. package of cole slaw
2 packages of Ramen noodles - beef flavor
2 bunches of scallions, diced into ¼" slices (use green tops also)
1 cup slivered almonds
1 cup sunflower seeds

Brown seeds in 400 ° oven for 5-10 minutes. Check so they don't burn. Pound noodle packs to crumble them and to separate them. Mix cole slaw, onions, noodles, almonds and seeds in large bowl.

DRESSING Mix 1 cup oil (vegetable or Canola), 1/3 cup white vinegar, ½ cup sugar and contents of the 2 flavor pouches from the noodles. Whisk thoroughly and pour over salad. This is crunchier and best when first made, but it lasts a long time and is still good days later.



RED BEANS, RICE & SAUSAGE

1 large package Mahatma red beans and rice mix
1 large onion diced - or package frozen chopped onions
1 pound or more any variety smoked sausage - like Hilshire Farms - cut into pieces - can have the meat guy at the market slice it for you.
Tabasco or other hot sauce to taste.

Combine all ingredients in a large casserole dish and follow the microwave cooking directions on the Mahatma package. Serve with a salad or vegetable, maybe some crusty French bread and a bottle of Tabasco sauce for those that like it hot.



BUTTERY PASTA WITH SHRIMP

8 oz. spaghetti
1 stick of butter
1 lb. shrimp (peeled)
1 green pepper (cut into chunks)
1 small onion (diced into chunks)
2 tsp. minced garlic
half a tsp. salt
half a tsp. oregano
dash of pepper
2 tomatoes (cut into half inch cubes)
parmesan cheese

Cook spaghetti. In another pot melt butter and then add the shrimp, green pepper, onion, garlic, salt, oregano, and pepper. Cook 7 minutes or until shrimp are pink and green pepper and onion are cooked. Add spaghetti to the shrimp mixture, and toss to mix all the ingredients together. Remove mixture from heat, add the tomatoes, stir to mix. Cover and let sit for a minute or until tomatoes are heated. Serve after sprinkling with parmesan cheese.

THE NO-VAMPIRES-IN-MY-HOUSE GARLIC SAUCE

5 large cloves of garlic
2 cups of sour cream or thick yogurt or a mixture of both

Blend the garlic and 1/3 cup of sour cream/yogurt in food processor or blender until the garlic is thoroughly blended - do not over-process yogurt, it turns to liquid. Fold the mixture into the remaining sourcream/yogurt, being sure to keep your head back so you don't inhale the fumes. Let stand in refrigerator for several hours.

SERVING SUGGESTIONS: drizzle over any cooked vegetable, dip breadsticks into it, dip french fries into it, marinate almost any meat in it, pour it over almost any cooked meat. In fact you can use this sauce with any food except chocolate, though we may try it soon.
NOTE: IT IS RECOMMENDED THAT YOU DO NOT EAT THIS SAUCE BEFORE GOING ON A JOB INTERVIEW, MEETING THE MAYOR OR GOING ON A FIRST DATE.


ALL PURPOSE SKILLET POTATOES

potatoes-washed and diced or run through any type of food processor that slices, dices or juliennes. About 6
olive oil
garlic-one clove for every 6 potatoes
thyme- 2 tsps. of fresh for every 6 potatoes- use considerable less if using dried
parsley-small handful of fresh-about 1 tbls. if using dried for every 6 potatoes
rosemary-1/2 tsp. of dried
salt and pepper-to taste

Cut up potatoes and put in hot skillet with olive oil, add all ingredients and cook to desired doneness. Serve for breakfast, brunch or toss in left over meats for a fast dinner. You can use any herbs you like, these are just may favorites, I occasionally add onions as well.


EASY, EASY DESSERT

4 bananas
small amount of orange juice

Cut the bananas into 1" pieces, then place them in a bowl. Pour the orange juice over the bananas and stir gently until the bananas are coated with the orange juice. Freeze the banana pieces until needed. Remove the bananas from the freezer 10 minutes before you want to serve them. After they have been out of the freezer for 10 minutes, blend then in the food processor until smooth like ice cream. Serve. Garnish with a slice of fresh banana, if you wish. We have even served this to company in crystal goblets.


GARLIC BUTTER SHRIMP
(very easy)

1 lb of shrimp (peeled and cleaned)
1 stick of butter
half a cup of olive oil
1 onion or scallion (diced)
2-3 tsp of minced garlic (garlic powder can be used)
pasta (any pasta can be used, I like angel hair or linguine)

Melt butter in the microwave in a 9" x 9" dish. Add the olive oil, onions, garlic, and shrimp. Cover and refrigerate for at least 4 hours, this recipe is easy to get ready the night before or even in the morning before leaving for work. Cook your pasta and at the same time place shrimp mixture, still covered with saran wrap, in the microwave and cook on high for 4 minutes. Stir mixture, and cook another 3 minutes or until shrimp are pink and cooked. You can either mix the shrimp and pasta together or just top your pasta with the shrimp. Super easy and very good. Recipe is very adjustable. Measuring doesn't have to be precise.


EASY CRISPY CHICKEN

Mix: 1/4 cup light Miracle Whip (or other dressing) 1/3 cup grated Parmesan Cheese (Sprinkle from the container!) 1/2 teaspoon Garlic Powder

Spread mixture over 4 skinless, boneless chicken breasts

Top chicken with cereal flakes (Basic Four, Total, or similar type cereal) , potato chips or bread crumbs

Bake in 425* Oven on baking sheet for 15 to 20 minutes


NOODLES WITH TOMATOES

3-4 medium tomatoes
3 cloves of garlic
1/2 pound mozzarella cheese
1 pkg egg noodles

Peel tomatoes and dice. mince garlic. Cube cheese. Mix cheese, garlic and tomatoes and put in refrigerator for 2 hours. Boil noodles and drain. Put some noodles on plate, cover with tomatoes and eat . Serves 2-3.


FIBROMYALGIA VCITIM'S SOUTHERN BBQ FOR ONE!

1 Box Banquet Select BBQ Rib Dinner

Remove from carton. Cut and remove plastic from potatoes. Heat on High in microwave for 4 minutes. Stir Potatoes. Replace in microwave for an additional 2-3 minutes. Let stand 5 minutes. CAREFULLY remove plastic cover from meal. (Reckless removal will cause imminent steam burns in nostrils). ENJOY!!!!

FOR DESSERT:

1 Roll Pillsbury Cookie Dough (Whatever flavor of white, delightful, flowing goo you like.)

Preheat oven to 350 degrees. Place teaspoon dopplets of dough on ungreased cookie sheet. Bake for 9-14 minutes. Remove with mittens or imminent Fibromyalgia "DUH!" burns will occur on hands. Enjoy!

If in flare, eat that gooey, carcinogenic dough right from the damn tube.


MRS. B'S CHICKEN SOUP

Buy a whole chicken [(or parts you like, or backs and necks), if you like white meat chicken this will give you a good stock] approx. 3 lbs
Use a 6 quart pot, (bigger is ok but do not use more than four quarts of water) put the chicken in and fill the pot to an inch of the top.
Add salt and pepper and turn on to low heat.
Clean at least two carrots (three or four if you like carrot taste better than celery) and cut into thirds
Two pieces of celery with tops (three or four if you like celery taste better than carrot), cut up
Use cleaned parsnips (2 small, one large)
Cut Leek (one stalk) well rinsed
Onion (one large)
Clean bunch of parsley - hold on the side

Start to add the vegetables, to the water do not let the water come to a boil (it will overflow. Cook slowly until the water is turning yellow, add the parsley and cook for another hour. Remove the chicken and vegetables. Cut up and save the vegetables you like as well as the chicken. Place in a covered bowl or baggie and refrigerate. Allow the stock to cool and then refrigerate. When cold remove the solid yellow fat. Heat and serve. You can use it fresh but you have more fat that way. I usually make it at night and serve the next day.


MATZOTH BALLS FOR SOUP

In the international food section of the grocery store, on the jewish food shelf find a box of Matzoth Meal.
4 eggs beaten to light and fluffy and add 1/2 c stock or water with a bouillon mix in 1 cup of matzoth meal, salt and pepper. Mix all together, refrigerate for 30 minutes, add some club soda if it is very thick. Coat your hand with oil and form loose balls, drop into a pot of water at a rolling boil, cook uncovered for about 1 hour. Remove from water with a slotted spoon and place gently into your heating soup. If you have floaters you did it just right, if you have sinkers you tell those eating that that is the way they are meant to be. Beating the eggs and using club soda keeps them light, my best efforts some time still result in sinkers


NOODLE PUDDING

One lb. box of broad noodles, but not lasagna,
6 eggs (you can you egg substitutes) or only four if you only found a 12 oz package

Cook to al dente. Rinse until cool in a colander. Mix eggs, salt and pepper; add noodles and put in a greased pan (aluminum throw-away is great. Bake at 350 until top is golden. If you add cinnamon, sugar and well drained fruit cocktail you can use it as a side dish instead of in soup.


HOMEMADE CHILI

1 large can tomato juice
2 cans chili beans
2 cans diced tomatoes with chilis
1 onion
2 t. chili powder (I think) I just shake it a little while)
2 lbs ground chuck

Brown beef and onions. In large pot, empty cans and dump in beef mixture. Add spice. Keep a glass of milk near by. My boys love this soup on a cold autumn day.


FOOL'S TOFFEE

36 2" x 2" saltine crackers
1 cup butter
1 cup brown sugar
11 ½ oz. Chocolate chips (semi-sweet or milk)
½ cup chopped pecans or walnuts

1. Place crackers in a foil lined jelly-roll pan. Grease the foil.
2. Blend and heat the butter and brown sugar to boiling. Boil 4 ½ minutes.
3. Pour mixture over the crackers and bake at 375 degrees for 5 minutes.
4. Then sprinkle the chips over the hot crackers when they come out of the oven. Spread the chips when melted.
5. Sprinkle with nuts.
6. Cool in the refrigerator.
7. Break into pieces and store in the refrigerator in an airtight container. Unless you eat it all in one sitting, then storage is not a problem.


TORTILLA SOUP
(the only recipe that all of my picky eaters will eat)

Saute:
1 medium onion, chopped
2-3 cloves garlic, minced
2 T. olive oil
Add:
4 cans chicken broth
3 zucchini-quartered
32 oz. Can stewed tomatoes
30 oz. Can tomato sauce 24 oz.
Frozen corn
1 tsp. each: cumin, black pepper & cayenne (amount of spice can be decreased or increased depending on your preference).
1 can of cannolini beans or any other kind (optional)

Heat the above. Last add 2-3 chicken breasts (halves) that have been cooked and cut or torn into pieces. Or ½ pound of browned ground turkey can be substituted. Cook until the zucchini is tender. In individual serving bowl, put handfuls of broken tortilla chips, a layer of shredded monterey jack & cheddar cheese. Ladle hot soup over the top and serve. Eat and Enjoy!


SLOPPY MEATBALLS

1 pkg. of Frozen Meatballs
1 can Manwich Sauce

Empty meatballs into sauce pan and add Manwich sauce. Simmer, stirring occasionally until meatballs are heated through. A little BBQ sauce can also be added to taste. Meatballs can also be simmered for hours in a crock pot for those who work. Spoon them on toasted hot dog buns, or hoagie buns and top with cheese if desired.

CHICKEN MARENGO

4 pieces of chicken breast-skinless and boneless or 4 legs (upper and lower)
1 medium onion sliced
2 garlic buds sliced fine
1 can of tomato soup undiluted
1 can of golden mushroom soup undiluted
1 can of stems and pieces mushrooms drained or 1 cup fresh sliced
1 cup of long grain rice uncooked

Place all ingredients in a casserole dish with rice put in first then chicken, add soups and onions, garlic and mushrooms. Add 1 can of water over all and cover. Bake at 350 degrees for 1 hour uncovering during last 15 minutes.


Madam X's Recipe for
FIBRO SPAGHETTI or MACARONI

water
spaghetti or macaroni
Prego spaghetti sauce can of
Contadina or Del Monte stewed tomatoes (substitution for above stewed tomaters: use those that are flung your way by the folks on this here Wall, for your bad jokes, ...my personal supply is huge, call if you need some).

Now, boil enough water, then add enough spaghetti or macaroni, bring back to boil and simmer until done (we prefer "al dente", which means chewy). Put Prego sauce and tomatoes (stewed or otherwise) into a bowl and heat up in microwave. Drain pasta and add to bowl of sauce & tomatoes, mix well. Serve up on Dixie paper plates and eat up. When done eating, do the dishes (as in, throw 'em away!). Doneness has set in.

Now if you want the above as a side dish, then add the following.....


MADAM X's CHICKEN

buy nice, fresh chicken tenders
1your favorite spice blend
cooking spray

Shake your favorite spice blend on one side of the chicken tenders. Spray cooking spray into a Teflon-coated fry pan. Heat the pan. Put chicken tenders in pan (unseasoned side down first). Lightly brown. Turn to other side and brown until done. Cooks are allowed to blow on one and eat with fingers to make sure they're done. Remove to paper plates when done, and eat heartily.


Both of the above are low fat recipes... a bowl of spaghetti is about 3 points on a diet and three tenders are worth about 2 points. Leaving enough room to eat a Dilly Bar (3 more points) for dessert! Enjoy!!

TATER TOT CASSEROLE

2 lbs. hamburger
1 bag of tater tots
1/2 c. onion
1 1/2 cans of mushroom soup
garlic to taste
1/2 c. milk
1 -20 oz. bag of corn (frozen)

Brown the hamburger and onion and garlic, drain & spread in the bottom of a 9x13" pan. Pour soup and milk over hamburg and mix well. Take the frozen corn and layer over hamburg. Place rows of tater tots all over the entire top of corn. Take a fork and poke down through a little.

Cook 1 hour at 350* Cool for 10 mins so you do not burn your tongue.

Bake a potato in the microwave for 5 minutes Remove and wrap in a towel for another 5 minutes Cut 'em open and sprinkle w/Molly Butter, then add Cottage Cheese and Salsa! Mmmmmmm good! (really, just give it a try, okay?)


MUD PUDDIN'

1# oreo cookies
1 1/2 stick of butter
1/2 cup sugar

Crush cookies fine.... Mix .... leave some for topping

Filling:
1-8oz. cream cheese
1 cup powdered sugar
3 cups milk
2 small French vanilla pudding
4 oz. Cool Whip.

Mix and fill over cookie mixture and sprinkle top..


PASTA WITH SMOKED TURKEY and RED PEPPERS

1 lb. smoked deli turkey (2 thick slices) cut into cubes
1/2 jar roasted red peppers (cut into thin strips)
1 lb. penne pasta
10 oz. DiGornio Light Alfredo Sauce
1/2 c. skim milk
1 lb. already sliced fresh mushrooms
6 oz. finely shredded parmesan cheese (in bag, not can)
1/4 stick butter (or margarine)
3 tbsp. Olive Oil
1/4 c. fresh basil cut fine (or 2 tsp. dried)
1/4 tsp. dried garlic
Pinch of salt
Loaf of already prepared garlic bread from store (heated as per directions on bag)

Cook pasta as per directions on bag. (best if cooked 9-10 min.) While pasta is cooking, heat olive oil and butter in skillet on medium. When butter is melted, saute mushrooms till tender; add pepper slices, basil, garlic and salt, stir. Reduce to simmer. Add turkey cubes, stir. Allow to simmer for a few minutes, then add Alfredo sauce and milk. Stir thoroughly. Add 1/2 of parmesan cheese. Allow mixture to simmer while pasta cooks. When pasta is done, drain, set aside. In large, deep bowl, place half of pasta and half of turkey mix, stir. Add remaining pasta and turkey mix, stir again making sure all of the pasta is coated with the Alfredo sauce. Serve with remaining parmesan cheese sprinkled on top and slices of hot garlic bread. Enjoy!!


SPOONBURGERS

1 lb. ground meat or more
1 onion, chopped
1 can chicken gumbo soup
1 can water
1 T. Mustard
1 T. Catsup
1 package of hamburger buns

Sauté ground meat, remove to bowl. Then add the chopped onions to the skillet and brown. Add the cooked meat, soup, mustard, catsup and one can of water. Cook for 20 minutes. Serve over opened hamburger bun.


HAM AND CHEESE SQUARES

1 lb. frozen hash brown O'Brien potatoes, (Thawed) about 4 cups
6 oz. fully cooked turkey or ham, (I've used Spam also)
4 oz. shredded Cheddar or Swiss Cheese
6 eggs beaten
1 cup Plain Non-Fat Yogurt
1/2 tsp. salt
1/4 tsp pepper
1 apple

Preheat oven to 350 Combine all ingredients except apple. Spread evenly in a greased 13x9 baking pan Bake for 40 - 45 min. until golden brown and firm in center Let stand 5 min. Cut into squares, garnish with apple slices, serve.


CHICKEN LICKEN

1 small box mixed long grain/wild rice
1 chicken - cut in pieces or breasts
1 can cream of celery soup
1 can chicken broth
1/2 cup of milk seasoning packed in rice

Butter an 8x13 baking dish. Sprinkle uncooked rice evenlyon the bottom. Lay pieces of chicken on top. Heat soup and broth with milk and when hot pour over chicken. Sprinkle with seasoning. Cover with foil and bake at 325 for 2 1/2 hours ENJOY!!!


CHEDDAR RANCH POTATOES

4 potatoes diced
1/4 cup ranch salad dressing
grated cheddar cheese

Bake diced potatoes until soft at 400 degrees. Remove from oven and coat with ranch dressing by stirring with a spoon. Top with cheddar cheese. Place back into oven and let bake until cheese has browned. Add salt and pepper to taste.


MARINATED FLANK STEAK

4 flank steaks (have butcher tenderize--even if he says they will shred)
12-16 fresh mushrooms, sliced (canned will do)
1/2 cup green onions, diced
4 slices mozzarella cheese
butter to saute

Marinade:
1 can (46 oz.) pineapple juice
1/3 qt. red table wine (or same amount of coke-even diet coke)
1/4 qt. soy sauce (soy light is fine--less sodium)
1/8 cup garlic (optional as far as my stomach is concerned)
1/4 TBS. Lawry's Season Salt

Preparation: Combine the marinade ingredients in large bowl. Add flank steaks, (skin and fat removed). Place in refrigerator for 24-36 hours. When ready to cook, broil the steaks to your preference. Saute mushrooms (or open can) and green onions (another stomach option)in butter. Slice the steaks across the grain and top with the mushrooms and green onions. Top with cheese and bake in hot oven until the cheese melts. Serves four.

This is really easy since it can be done "over time". Let someone else put it on the grill. And make at least a double recipe because it freezes well.

CHICKEN AND SOUP

Ingredients:
water
celery stalks
carrots
onion
bay leaf
thyme
oregano
basil
celery salt
garlic (as much or little as you please)
lemon
one whole chicken (not cut-up)
and Orzo pasta, if you choose

Start boiling the water in a big enough pot to accommodate all ingredients. Cut off ends from (a couple of stalks) celery, (a couple of) carrots, onion, and garlic (if desired), take off skins, and cut into chunks and throw into the pot of water. Add pinches of herbs to taste and about a tsp. or less of celery salt. When water and all veggies come to a boil, add the whole chicken and bring back to a rolling boil. Once rolling boil is reached...with a long fork, remove chicken to a plate to rest for a moment. Add into pot of water, the Orzo pasta (resembles grains of rice) and bring pot back to a rolling boil. Put chicken back into pot, bring back up to boil and then remove from heat source, squeeze juice of half a lemon into pot and cover with a lid and forget about it. That way, we're sure the chicken is truly cooked to the right temp. Later, (about an hour or so) after pot has cooled, it's time to eat. You can either pull chicken out of the pot and dice up for chicken salad sandwiches with the Orzo soup as a side, or just reheat everything all together, remove chicken to a plate to cut up and serve, however you wish. This is an old Greek recipe and is ideal for someone with fibro, cause you get to rest in between the starting and the finishing and the thing that is the most amazing is how sweet and tender the chicken ends up. Serve with somebody's hearty, homemade bread. MM-mmm


CHEATIN' TATER SOUP

Ya have ta sing "Yer Cheatin' Heart" as you peel and dice 10 taters. Ya gotta cry a lot as yor peelin an slicin those 4 large onions, don't matter which kind(theys all hot). Put em in a pot and boil em til nice and tenderhearted. Open a small can of cream of onion and cream of celery soup(this is the cheatin part) and combine with the water, taters an onions. Stir for a few minutes until well together. Can serve 2 hungry farmers or 5 townies. Did I forget that soup has to be that condensed kind? Happy eatin' and don't forget to burp!


SEAFOOD GUMBO
(Chef's Note:My first attempt, and it was a SUCCESS!!!)

Fresh Butter Clams (in the shell)
Fresh Mussels (in the shell)
Fresh Crab (out of the shell) tee-hee
1 can of Italian flavored, diced tomatoes
2 cans of Hearty Choice (lower calorie/sodium) Chicken Broth
Fresh Dill (or seasonings of his choice)

Sautee:
1 C. onions,
4 strips of bacon, and
12 cloves of garlic (we love garlic in our family...kind of cleanses the soul...) hee-heee...(& the neighborhood)...(go ahead, try a LOT of garlic! Hmmmm....)

In a large pot combine the sauteed items, and add the broth, tomatoes, seasonings, and all the seafood. Simmer on low for about an hour. Serve with fresh garlic bread (theres that yummy garlic again), or drop biscuits and butter, w/a small green salad. ENJOY!!!!!


NEIMAN-MARCUS CAKE

1 yellow cake mix
1 stick margarine, melted
2 eggs

Mix above together and pat into a 9x13 inch pan

Mix:
1 stick margarine, melted
1 box powdered sugar
2 eggs
1 (8 oz.) package cream cheese

Pour over first ingredients. Bake at 300 degrees for 20 minutes and then for 25 minutes at 350 degrees.


MOMMA'S EASY BEEF STEW

I cook this a lot in the winter when I want something hearty to warm me up (when I am sick of canned soup and grilled cheese sandwiches) but hurt too bad to spend a lot of time in the kitchen. It is quick to prepare, tastes great and does not mess up the kitchen. Give it a try!

1 lb. cubed stew meat
5 medium potatoes - peeled and cut into 1 inch cubes
1 small package peeled baby carrots
2 cans golden mushroom soup
Salt and pepper as desired

Mix all above in a casserole dish, cover, and cook at 350 degrees for 1 1/2 hours or until vegetables are tender. Momma uses regular carrots - peeled and chopped. I use the packaged baby carrots because it is easier and faster.....really just a matter of if you want to pay for the convenience. Pain will make you do that sometimes! Either way, I think this will become a stand-by dish at your home, too!


LOW FAT EASY MARINARA

1-2 cans plum tomatoes chopped or whirl briefly in processor(they cannot be regular-too bitter)
a splash olive oil
2-5 cloves whole, peeled garlic
sugar or packet artificial sweetener, to taste
fresh basil coarsely chopped, to taste (about 6 leaves)
about 1/2 c.
Red wine pepper

Heat oil in pan. Add garlic and sauté 'til lightly browned. This happens quick so watch it! Add tomatoes, sugar, and wine, bring to boil. Add basil and pepper. Heat another 1-2 mins. This dish takes about 7-10 min total. Don't overcook. Serve over pasta.


ITALIAN CHICKEN

5 boneless chicken breasts(or bone in)
1 15oz. can of whole tomatoes
1 cup diced onions
2 cloves of garlic
1 teaspoon oregano
1 teaspoon basil
1 cup Jack cheese

Place chicken in greased 13x9 baking pan. Pour tomatoes over top. Sprinkle remaining ingredients over top( except the Jack cheese). Bake at 350 degrees for 45 minutes. Sprinkle on cheese and bake for 10 more minutes. DELICIOUS!!

Step 11: Stick a turkey in the thermometer
Step 12: Glass yourself a pour of whiskey
Step 13: Bake the whiskey for 4 hours
Step 14: Take the oven out of the turkey
Step 15: Take the oven out of the turkey
Step 16: Floor the turkey up off of the pick
Step 17: Turk the carvey
Step 18: Get yourself another scottle of botch
Step 19: Tet the sable and pour yourself a glass of turkey
Step 20: Bless the saying, pass and eat out.
