TABOULI STUFFED TOMATO APPETIZERS
PARTY NACHO CHEESE DIP CARAMEL DIP FOR APPLES

TABOULI

1 cup of bulgur (cracked wheat)
Put into cold water and let it soak up for 15 mins. Use whole wheat and it has more fiber.
3 bunches of parsley. (I prefer curly)
4-7 leaves of mint (go with 4 and add to taste)
juice of 3-4 lemons
2-3 green onions
1 tomato
2 tablespoons of olive oil
salt to taste
pack of whole wheat pita bread

Once the bulgur has soaked up the water, add the lemon juice, olive oil and salt.
Seperately, cut the leaves of the parsley.. use a food processor if possible.
Cut tomato and onions, and mint leaves very small, (also in food processor if possible).
. add bulgur to the parsley mix, refrigerate for an hour and scoop into pitas for a yummy almost fat free, healthy quick snack.

STUFFED TOMATO APPETIZERS

Ingredients:
36 whole cherry tomatoes
1 (8 oz.) package cream cheese, softened
1 tablespoon dry Italian salad dressing mix
2 tablespoons milk
3 tablespoons chopped, fresh parsley
Preparation:
Place tomatoes, stem side down, on cutting board. Make an "X" cut to within 1/4" of bottom of each tomato. Carefully spread to open.
In small bowl, combine cream cheese, dressing mix and milk. Blend well.
Fill each tomato with heaping 1/2 teaspoon of cream cheese mix ( or fit a pastry bag with a large star tip and pipe into cherries).
Sprinkle tops with chopped parsley.
Refrigerate up to 6 hours before serving.

PARTY NACHO CHEESE DIP

1 lg. box Velveeta
1/4 c. milk
1 lb. hamburger
1 sm. chopped onion
1 sm. chopped green pepper
1 lg. jar Mexican salsa
Brown hamburger with onion and pepper.
Melt cheese with milk over double boiler.
When all melted, add drained hamburger mixture and salsa. mix well.
Place in Crockpot on low.
If too thick, add 1/4 cup milk and blend.

Caramel Dip for Apples

1 c. brown sugar
1 (8 oz.) pkg. cream cheese
Apples, sliced thin
Combine brown sugar and cream cheese until smooth. Slice apples thin and dip.
Great dip and quick when you don't have time to make caramel apples on a stick
